Wash the tomatoes and make a cross- shaped incision in the skin.

Drop the tomatoes into boiling water for 10 seconds.

Then remove and plunge into an ice bath for 30 seconds so that the skin comes off easily.

Cut the skinned tomatoes into quarters, remove the seeds and dice finely with a sharp knife.

Place on kitchen paper.

Set aside.
