Sweet pepper ragout

Ingredients

  • 100 g red peppers
  • 100 g yellow peppers
  • 100 g green peppers
  • 100 g onions
  • 2 garlic cloves, crushed
  • 3 bay leaves
  • 10 g lemon thyme sprigs
  • Pinch of curry powder
  • Olive oil, for frying
  • 1 glass water
  • 30 g chilled butter, cut into small cubes
  • Salt and freshly ground black pepper

Instructions

Peel the peppers using a vegetable peeler, then chop them finely, along with the onions.

Heat the oil in a saucepan.

Add the vegetables and crushed garlic and brown over a low heat for 10 minutes.

Add the herbs and curry powder.

Deglaze the pan with a small glass of water.

Simmer, partially covered, for 20 minutes.

Remove from the heat, add the butter and season to taste.
