Langues de chat biscuits

Serves: 50 biscuits


  • 125 g butter, softened
  • 125 g icing sugar
  • 170 g flour, sifted
  • 1 vanilla pod
  • Pinch of salt
  • 2 organic eggs



Preheat the oven to 190°C.


Line a baking tray with a silicon baking mat.


Split the vanilla pods in half lengthwise and scoop out the seeds using a teaspoon. Place in the bowl of a food processor, add the flour, salt, icing sugar and butter and mix for 30 seconds.


Add the eggs one at a time and mix again for 10 seconds.


Spoon the mixture into a piping bag fitted with a size-6 round nozzle and pipe straight lines, 5-7 cm long, onto the baking mat.


Leave at least 6 cm between each biscuit.


Bake in the oven just long enough for the biscuits to turn a light golden-brown. Remove from the oven and allow to cool.


These biscuits cook quickly, so be sure to keep an eye on them when they are in the oven. Langues de chat biscuits can be stored in a sealed container for up to two weeks.
