Horseradish sauce for Tafelspitz
- 300 ml single cream
- 3 tbsp strong horseradish sauce
- 2 tbsp chives, finely chopped
- 1 apple, seeded and grated unpeeled
- A few drops of lemon juice
- Fleur de sel and freshly ground black pepper
Place all the ingredients in a bowl. Whisk together until you have a creamy sauce. Season to taste. Serve chilled.
