- Yolks of 4 organic eggs
- 1 whole organic egg
- 30 g caster sugar
- 70 g ground almonds
- 40 g flour, sifted
- 20 g unsweetened cocoa powder
- 40 g melted butter
- Whites of 3 organic eggs
- 50 g caster sugar

Preheat the oven to 190°C.

Beat the egg yolks with the whole egg, 30 g of caster sugar and the ground almonds until the mixture turns white.

Whisk the egg whites with 50 g of caster sugar until they form stiff peaks.

Stir the egg whites into the egg yolk mixture.

Gently add the sifted flour and cocoa powder using a spatula.

Lastly, stir in the melted butter.

Fill baking rings or trays with a layer of the sponge mixture as needed.

Bake the sponge for approximately 20 minutes at 190°C.

Remove from the oven and allow to cool.
